Sample Recipe: Chicken or Turkey Snack Bites

2 lbs chicken or turkey, skinless, boneless (breasts or thighs work well)
Salt and pepper to taste
1 tablespoon seasoning—see Variations
1 teaspoon olive oil
2 tablespoons butter

Cut up fowl into bite-sized pieces. Heat oil and butter in pan. Season bites with salt and pepper and any other seasonings you like and rub seasonings into meat well. Saute pieces in pan, browning well all over. Take out a piece—cut in half to be sure it's done. Place in bowl in fridge.


  • seasonings such as poultry or ethnic
  • individual herbs such as basil, tarragon, paprika, powdered garlic, powdered onion, celery salt, etc.
  • after sauteing fowl pieces add a favorite sauce such as a chutney, teriyaki, jerk, ketchup, mustard and stir well while letting simmer 4 or 5 minutes
